Recipe of the Session: Apple Cinnamon Muffins

For this final edition, I will share with you the recipe for the very first thing I baked. I was craving something sweet and sour so I spent a good hour scouring the internet for something to fulfill this craving and there it was ‘Apple cinnamon muffins’. I hope you enjoy baking this last recipe as much as I did.

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 3/4 cup white sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/3 cup vegetable oil
  • 2 egg
  • 1/3 cup milk
  • 2 apples – peeled, cored and chopped
  • 1/2 cup white sugar
  • 1/3 cup all-purpose flour
  • 1/2 cup butter, cubed
  • 1 1/2 teaspoons ground cinnamon
  • Pinch of salt

Instructions:

  1. Preheat oven to 200 degrees C. Grease six (or more, depending on the size of your muffin tin)  muffin cups or line with paper muffin liners.
  2. Stir together 1 1/2 cup flour, 3/4 cup sugar, salt, baking powder and 1 teaspoon cinnamon. Mix in oil, egg, and milk. Fold in apples. Spoon batter into prepared muffin cups, filling 2/3 of the cup.
  3. In a small bowl, stir together 1/2 cup sugar, 1/3 cup flour, butter, 1 1/2 teaspoons cinnamon and add a pinch of salt. Mix together with a fork and sprinkle over unbaked muffins, filling the rest of the cup.
  4. Bake in preheated oven for 20 to 25 minutes, until a toothpick inserted into the center of a muffin, comes out clean.

Tip

  • Aluminum foil can be used to keep food moist, cook it evenly, and make clean-up easier.

  • Also, when I bake I substitute sunflower oil for butter and I used it in this recipe and all the recipes I have shared with you and they’ve turned out great.

  • The amount of topping this recipe makes is more than you need but then again, this depends on the size of the cups of your muffin tins so I suggest halving the measurements of ingredients for the topping and make more as you require.
