The Origin of Tiramisu
In the Italian language, “Tiramisu” translates to “pick me up”. Near the end of the 20th century, Tiramisù was Italianized from the Treviso dialect, “Tireme su”. It is an Italian custard-like dessert originating in the region of Treviso, Italy. This dessert’s origin date remains a topic of debate, but evidence refers to the late 1960s or early 1970s. Based on unproven myths, tiramisu originated in the 17th century when a dessert similar to it was made for Grand Duke Cosimo de’ Medici III. This meal was called “Duke’s Soup” when the Grand Duke visited the northwest Tuscan province. This dessert gained popularity after the Duke brought it back to Florence, Italy. Considering the similarities between these dishes, tiramisu today didn’t exist until the 1970s. This dish was unintentionally created in the Italian restaurant Le Beccherie.
What is Tiramisu?
Tiramisu is made up of lady fingers soaked in coffee and layered with a mixture of egg yolks, sugar, coffee and mascarpone (a soft Italian acid-set cream cheese) to make the cream which is layered on top. This process is repeated several times before being placed in the fridge to cool (leave overnight for best results). Once taken out of the fridge, top with cocoa powder and serve!. Of course, you can make different versions of this recipe like ginger, lemon or even strawberry tiramisu. This recipe has gone worldwide since it has been discovered outside of italy. This recipe has changed due to different cultures, families and traditions. I will be showing the original recipe from Treviso, Italy.

Recipe:
- 300g mascarpone
- 3 egg yolks
- sugar 90g
- lady finger biscuits
- coffee
- bitter cocoa powder
- Water (about 250ml in a bowl)
Preparation:
- Beat the eggs and sugar together
- Mix in the mascarpone to form the cream
- Dip the lady fingers into the coffee(combined in a bowl with water) and place a layer in a dish
- Cover the layer of biscuits with the mascarpone mix and continue to layer the ingredients, making sure the mascarpone is on the top layer.
- Place in the refrigerator for 10 hours
- Sprinkle with the bitter cocoa powder and serve chilled
(This can serve 6-8 people.)
